$12.99lb choice, this weighed in at 3lb and some change. Smoked it at 180f for 2 hours until it hit 98 internal. Seared over charcoal at 550f until 120 internal. Served at 128 after rest. Seasoned with MSG, coarse ground Blac pepper, dehydrated onion and garlic. Finished the bone with some Japanese bbq sauce. Ate the spinalis, saved the rest for fried rice the next day and had one of the top 5 worst beers I've ever tasted with it!

Edit: I REPEAT THE SAUCE IS ONLY ON THE BONE. JESUS MF CHRIST

    The best part of this was the beer, imho. And I’m not shitting in your steak like some of these other people, but I dearly miss Southern Tier in the fall. Pumking, Warlock, and especially Rum Pumking were three of my favorite October brews. Can’t get them anymore. Not my favorite pumpkin beer is Shipyard’s Smashed Pumpkin.

    Leftover ribeye for fried rice is also our go to! I especially leftover smoked-reverse seared ribeye in fried rice. The smoke taste adds so much flavor!

    How’s that beer? Years ago Southern Tier Pumking was the best pumpkin beer out there in my opinion. Tried it for the first time last year after not having it for several years and it just wasn’t as good
